| The Cepa varietyThere are two thousand selections of recongnized usable grape varieties. The Cepa, a type of grape, marks the primary caracteristics that are named in wine varieties, caractaristics of taste and aroma.Climate and wine producersA wine's quality is influenced by the weather conditions of the year before and the year of the harvest. A grape vine needs between 400 and 700 mm of rain a year in order to mature. The maturation process depends on the vine's exposure to the sun and to the summer temperatures. In regions where there are few sunny days and the summer temperatures are cool, the vine does not mature fully, leading to lighter wines with lower alcohol content and greater acidity. In these cool regions, wine producers must resort to chaptalization, a process by which sugar is added to the grape juice during fermentation in order to produce a higher alcohol content. However, in warmer regions where grapes mature quickly, wine producers must correct the wine's low acidity levels by adding tartic acid to the must (grape juice) or wine.
